Yuzu is all the rage with the kids these days. So is collagen. Our very own smarty pants (AKA nutritionist) (AAKA Jacq Alwill) decided to Hannah Montana this sitch and cook up a recipe that is truly the best of both worlds. Over to you, Jacq!

INGREDIENTS
1 cup raw cashews
½ cup raw macadamias
½ cup almond meal
1 cup desiccated coconut
¼ cup collagen powder (optional)
2 tbsp yuzu juice*
2 tbsp maple syrup
2 tbsp coconut oil
METHOD
Step 1: Combine all ingredients in a food processor and blitz until a dough is formed.
Step 2: Press into a lined loaf tin and set for 3-4 hours in the fridge.
Step 3: Slice into pieces and enjoy. Store in the fridge for up to 2 weeks or freezer for up to 3 months.
*Remove collagen powder for the vegan option
